Fatty Patties

This is a recipe that I stole from my Mom and boy am I glad that I did!  I serve them anytime we have company for breakfast and they are a HUGE hit!!!  They are seriously delicious.... just make them ahead of time so you don't remember all the yummy calories that they have!

Ingredients:
1 pound spicy breakfast sausage
1 jar Old English cheese
1/2 stick butter
1 package of English Muffins

1.  Cook the breakfast sausage and then drain well; return sausage to pan

2.  Combine the Old English and butter with the sausage; mix well (make sure butter is totally melted)

3. Split English muffins in half and place them on a cookie sheet

4. Place a large spoonful of the sausage mixture on the English muffins and then bake at 350 until crispy.

*These are great to make ahead of time and freeze perfectly.  Follow the directions, but instead of putting the cookie sheet in the oven cover it with press n seal and place in freezer.  Once the fatty patties are frozen toss them in a Ziploc...bake at 350 when you are ready.

Simply Simple!

These are some very simple and very kid friendly recipes that Rhy Pie loves!  They are seriously so easy that I am not really sure why I am adding them...  Hayley-the oatmeal would be a great thing for Lyles!  xoxo

Veggie Pig in a Blanket

crescent rolls
any vegetable (cooked)
cheese

I saute the vegetables and usually use zucchini or carrots.  Then wrap the turkey dog, cheese and veggies in the crescent roll dough (use two triangles).  Make sure it is totally sealed or the cheese will ooze out.  Bake at 350 for about 10-15 minutes. 


Fruity Oatmeal

1/2 cup oats
1 cup milk
fresh fruit (pureed for young babies)

Bring the milk to a boil and then add quick oats, let cook stirring occasionally.  After the oats are done I mix in blueberries, blackberries, dates, and maple syrup.  I also like to add a spoonful of wheat germ! 

Veggie Macaroni

1 pound macaroni noodles (cooked and drained)
1/2 pound ground turkey or beef (cooked and drained)
14.5 oz can stewed tomatoes
8 oz can tomato sauce
1 cup peas
1 cup carrots (cooked and chopped)
Any other vegetable you want to add

Mix all ingredients and let simmer until well blended.  I break this into individual servings and freeze.

Banana Bread with Cream Cheese Glaze

This is a quick bread recipe that I found in the Food Network Magazine Mix and Match section. I have made a few simple changes to sneak in some nutrients. Hope you enjoy!


Banana (Veggie) Bread with Cream Cheese Glaze!


Ingredients:


1 large mashed banana
1 3/4 cups rolled oats
1 1/4 cups flour
3/4 cups sugar
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2/3 cup vegetable puree (I prefer butternut squash or sweet potato)
1/2 cup butter (melted)
1/2 cup plain yogurt
1 teaspoon vanilla extract


Glaze:
1 cup confectioners' sugar
3 tablespoon softened cream cheese
2 tablespoons milk
1/4 teaspoon vanilla extract


Directions:


1.  Preheat oven to 350
2.  Lightly butter a loaf pan
3.  Mix flour, sugar baking powder, salt, baking soda, cinnamon, and
     nutmeg in a large bowl.
4.  Add the rolled oats to the flour mixture
5.  In a seperate bowl whisk vegetable puree, melted butter, yogurt,
     vanilla, and mashed banana.
6.  Fold the egg mixture into the dry mixture
7.  Pour batter into prepared pan and bake for about 55 minutes
8.  Allow the bread to cool completely
9.  While bread is cooling, whisk together all ingredients for the cream
     cheese glaze
10. Pour glaze over cooled bread and let set (about 15 minutes)

Dad, Grandpa, IRONMAN!



I am just so proud of my dad! He finished his 4th full IRONMAN Triathlon this weekend and killed it! Way to go Dad...you are a rockstar! xoxo

Let the Good Times Roll!

Carter went on a boys fishing trip on Friday...so Rhyan and I had some good quality girl time! We had breakfast in bed, went on a long walk and even played in my make-up! I am amazed at how she already loves jewelry and make-up, she is such a girl!












Rhyan and I had a great time on Friday night, but we were excited when Carter got home on Saturday. Our weekends just aren't the same when he isn't home. We had a lazy Saturday at home, just the three of us. I can't help but think that days at home with my sweet family are the very best days!

I am really trying to be good about blogging and I am learning more about the whole blog scene everyday. I added the "Recipes we LOVE" section and will try to update it regularly. I really don't think that I have many blog worthy recipes, but I will do my best. I also wanted to share this fantastic website, http://www.weelicious.com/. Mayfest, Mudbugs and Mother's Day!











We had a very busy weekend filled with lots of fun activities! Rhyan had a blast, but was wiped out by bedtime on Sunday. The weekend started on Saturday morning with a big Mayfest celebration. Rhyan experienced a lot of firsts and loved it all! We thought that a giant bounce house might be a little overwhelming for her, but we were mistaken! Our little pumpkin is not scared of anything…I love this about her, but it also makes me a nervous wreck! After several hours at Mayfest we went to a crawfish boil hosted by the Muckleroy family. They thought of everything….including a baby pool and a mini bounce house. Rhyan could not get enough!



My second Mother’s Day was wonderful! We had a fabulous lunch and then spent the afternoon playing in the backyard. Rhyan brings us so much joy and I am so very thankful for her! God is so good!

Yu You




Well, I have finally decided to join the blog world and I am really not sure how to start! After thinking all day what my first post would be about the idea came to me as I was putting precious Rhyan to bed. We said her prayers and after a big hug and kiss I put her in her crib. As I was walking out of the room she looked at me with those big blue eyes and said, "Mama, yu you." I can't even begin to tell you how this made me feel. I am absolutely crazy about her...which is something I am sure most parents totally understand. : )
